The Fleur de Sel de l'Île de Ré is selected from the most accomplished (in our opinion) saunier (saltmaker) of the saltmaking villages in western France. While each of the three saltmaking villages--Noirmoutier, Guérande, and Ré--along France's rugged western and northern coasts coast have their strengths, our Fleur de Sel de l'Île de Ré is possibly the most refined and subtle. With a very faint rose tint and almost imperceptible scent of violets, Fleur de Sel de l'Île de Ré's fine crystals give a silken texture that puts this among the greatest of finishing salts anywhere.
